is really delicious. The spinach is cooked with onions and chillies, then mashed and combined with ground coconut, and finished off with a drizzle of good coconut oil
.So grab a bag of fresh baby spinach, and I will show you how to make this tasty vegetarian side dish, that will give you big forearms, and help you fight bad guys!
You will need the following ingredients:
Fresh baby spinach / Mulagu cheerai (Tamil)–11 cups
Chopped red onions–1 1/2 cups
Chopped green chillies–2 tablespoons
Turmeric powder–1/2 teaspoon
Ground coconut–1 cup
Coconut oil–2 tablespoons (Optional)
Roughly chop the spinach and add them into the pressure cooker, or a pan…
add the chopped onions, green chillies, salt, turmeric powder, and 5-6 tablespoons of water.
Stir, and close the lid. Pressure cook, for about 10 minutes, or until the spinach has shrunk down…Mash the spinach with a masher, and add the fresh ground coconut. Stir to combine.
Drizzle some coconut oil, stir, and its ready! Best when eaten with sweet curd rice.
