Kheema paratha

We love stuffed things in our house. We love calzones, egg puffs, chicken puffs, pizza pockets, samosas, empanadas…the list goes on…I remember the time I first ate Ceylon paratha, devoured it in 2 minutes flat, and then passionately declaring it as the best thing I’ve ever eaten in my life (Although there are many instances where I ate something and declared in a fit of passion that its the best thing I’ve eaten in my life). However, there is something about meat that makes me feel…um, what’s the word?…Oh yeah, primitive. It makes me feel like a cave-woman. Which is exactly the reason I like this kheema paratha. I know, its not very lady-like, but I don’t care!

This one’s from my mother in law. Warm, soft parathas stuffed with a meaty, juicy, spicy filling that’s so so good!
Its really easy, delicious, and perfect for a weeknight meal. This version here is a simple. The beef mixture is a personal thing, its all to your taste, you can keep it simple, or make it more complex, make it more spicy, or a little bit more tangy…you know the more and more you cook, you’ll just know. So, step into the kitchen, get your ingredients ready, and start cookin’!

You will need the following ingredients:

For the paratha:

Maida/Flour1 cup


Wheat flour1 cup


SaltTo taste


Oil


Water

For the stuffing:

Lean ground beef2 kg


Thick yogurt4 tablespoons


Turmeric powder1 teaspoon


Chopped/Minced garlic1 1/2 tablespoons


Chopped/Minced ginger1 tablespoon


Chopped onions1 cup


Chopped green chillies1 tablespoon


Coriander powder1 tablespoon


Red chilli powder1/2 teaspoon


Cumin powder1/2 teaspoon


Garam masala1/4 teaspoon


Freshly chopped coriander leaves/cilantroa handful


Salt To taste

Instructions:

Start by adding the yogurt, turmeric, and salt to the lean beef. Mix to combine, and keep it aside. Heat about 3 tablespoons of oil in a pan, and add chopped garlic, ginger and sauté for a minute..

Next, add the green chillies, give it a quick stir, and add the coriander powder, the chilli powder, and the garam masala…

Saute until everything is mixed together, and then toss in the meat.

Add the cumin powder..

And cook the beef until its dry…Next, add the cilantro, and mix them all together..

Now make the parathas as you usually would, and spoon in some of th mixture on to the middle of the rolled out dough..

And fold the dough, making sure the beef is going to stay inside and not ooze out, or rip open the dough…and gently roll it out one more time.

I’d been heating a nonstick tawa over med-high heat the whole time I was getting the beef mixture ready, so by the time I added a little oil, it was nice and hot. Now, put the paratha on the tawa, and let the paratha cook for about a minute or 2 on each side.

And its done! A perfect dish that satisfies my carnivorous palate…try it out and I’m sure you will love it too!
